Fermented Foods and the Microbes We Eat

Fermentation preserves food and creates live probiotics, and a growing body of research links them to better gut health.

Before refrigerators existed, humans preserved food by letting microbes do the work. Milk became yogurt, cabbage became sauerkraut, and grapes became wine. Fermentation is one of the oldest food technologies, and scientists now believe it may also be one of the healthiest.

Fermentation happens when microorganisms such as bacteria and yeast break down sugars and starches in food, producing acids, gases or alcohol. The process preserves the food and gives it a distinctive tangy flavour. Crucially, it also creates live bacteria known as probiotics, which may benefit the digestive system.

Research on gut health has grown rapidly in recent years. The trillions of microbes living in the human gut influence digestion, the immune system and even mood. Studies suggest that regularly eating fermented foods can increase the diversity of gut bacteria, which is generally associated with better health.

Not all fermented foods are equal, however. Many commercial products are pasteurized after fermentation, which kills the live bacteria, and some contain high levels of added sugar or salt. Traditional preparations like yogurt, kefir, kimchi, miso and raw sauerkraut are more likely to retain their live cultures.

The science is still young, and researchers caution against viewing fermented foods as a cure-all. But the evidence increasingly points in one direction: a diet rich in fermented foods, alongside plenty of fibre, supports the community of microbes that keeps us healthy.

پژوهش درباره سلامت روده در سال‌های اخیر به سرعت رشد کرده است. تریلیون‌ها میکروب ساکن در روده انسان بر هضم، سیستم ایمنی و حتی خلق‌وخو تأثیر می‌گذارند. مطالعات نشان می‌دهند خوردن منظم غذاهای تخمیری می‌تواند تنوع باکتری‌های روده را افزایش دهد که عموماً با سلامت بهتر مرتبط است.

با این حال، همه غذاهای تخمیری یکسان نیستند. بسیاری از محصولات تجاری بعد از تخمیر پاستوریزه می‌شوند که باکتری‌های زنده را می‌کشد و برخی حاوی مقادیر بالای شکر یا نمک افزوده‌اند. فرآورده‌های سنتی مانند ماست، کفیر، کیمچی، میسو و کلم‌ترش خام بیشتر احتمال دارد کشت‌های زنده خود را حفظ کنند.

علم هنوز جوان است و پژوهشگران هشدار می‌دهند غذاهای تخمیری را داروی همه‌چیز ندانیم. اما شواهد به‌طور فزاینده به یک جهت اشاره می‌کنند: رژیمی سرشار از غذاهای تخمیری، در کنار فیبر فراوان، از جامعه میکروب‌هایی که ما را سالم نگه می‌دارند پشتیبانی می‌کند.
